When we were in San Diego, I had a dear neighbor and friend named Divina. Dylan was two at the time, and he called her "Doo-Veena." She is the most amazing cook. We had Thanksgiving dinner together that first November we were there, and Divina made these.
Sweet Potato Balls
2 large sweet potatoes, peeled, cooked, and mashed
1/3 c. brown sugar
1/4 tsp. nutmeg
1/2 tsp. orange zest
1 - 2 T flour
large marshmallows
Topping:
1/2 c. grated coconut
1 1/2 T sugar
1 tsp. cinnamon
Mix the above ingredients. Place marshmallow in center of each ball of dough. Roll in coconut mixture. Bake at 375 for 10 mins, until golden.
