Crock Pot Chicken Noodle Soup



Can I tell you how much I love cooking with a crock pot? Easy peasy lemon squeezy.

And can I also tell you how freakin' cold it is in Idaho right now? We have had ONE nice day this summer, so far. And it's the middle of June. Come ON. So, as I was making my menu for this week's meals, instead of fun, summery, light fare, I was leaning more toward the casseroley, soupey, pot pie-ey recipes. It's ridiculous.

So yeah. I'm making chicken noodle soup this week. Homemade. In the crock pot. With homemade rolls. Aw yeah, baby. (Yes, I'll put the rolls up soon.)

Crock Pot Chicken Noodle Soup

4 cups cooked, shredded chicken
20 oz. froz. mixed vegetables
1 onion, chopped
10 chicken bouillon cubes
1 tsp. salt
1/2 tsp. pepper
12 cups water
1 1/2 cups egg noodles

Put everything but the noodles in your crock pot. Add the noodles the last hour to hour and a half of your cooking time. I know 1 1/2 cups doesn't look like enough, but TRUST ME, it will be. I've second- and third-guessed that amount before, and it turns into a big pile of mush. It's not truly soup if you put in too many noodles. It's more like a weird casserole. Not cool.

  1. How long to cook all the ingredients prior to adding noodles? On high or low? This sounds and looks scrumptious and I'm anxious to try it. Thanks for sharing!

  2. Hey, Pea Rose, I feel badly -- my crock pot is the kind where you choose to cook 4 hours, or six hours, or 8 hours, or 12 hours. So I push a button depending on when I want it done. From what my family members with high/low crockpots tell me, if they want something to cook all day while they're at work or just busy all day, they set it to low. So I'd say if you want to get it out between six and 12 hours, that would be a low setting. If you want it to be done between four and six hours, then put it on high. Whether you set it to high or low, only put in the egg noodles the last hour to hour and a half of cooking time. If you're cooking on high, I'd only put those noodles in for the last hour of cooking time.
